Pat feta block down with paper towel then cut the block into small cubes. Pour all the liquid from the chickpea pan into a bowl, add gf bread crumbs into a seperate bowl, and add corn starch & salt into another bowl. You should have 3 seperate bowls for your dredging station.
Dip one feta cube at the time first in chickpea liquid, then corn starch, back in chickpea liqiuid, then gluten free breadcrumbs. Repeat this process carefully until all feta cubes are coated.
While you are dredging the feta cubes, pour the canola oil into a fry pan over medium heat. When feta cubes are ready, fry 1-2 minutes on each side making sure it does not melt. When done, place on paper towel to drain excess oil.
In a large bowl, add all salad ingredients and stir to combine. Seperate salad mixture between 2 plates then top with feta cubes.
For the dressing, whisk all ingredients in a mixing bowl. Taste to adjust where needed. Pour dressing on top of salad and ensure feta cubes are coated. Ready to serve!
