GF & VGN Fried Feta Salad in a Hot Honey Dressing

This simple salad is elevated by the lightly fried vegan feta cubes alongside the hot honey dressing. For the coating, I used gluten-free bread crumbs. If you can’t find any, blend up mixed nuts in an emersion blender and use the nut coatings as bread crumbs. Instead of egg, I used the liquid leftover from cooked chickpeas, also known as aquafaba, which mimics an egg white.

If you have an air fryer, you can use that instead of the pan frying method. The key to the feta cubes is to lightly fry as we don’t want them to melt. This recipe does not have protein added but tofu or seasoned chicken are great additions if wanting more.

Ingredients
  

Salad

  • 1 bag butter lettuce
  • 2 cups shredded cabbage
  • 1 avocado cubed
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onions chopped
  • salt & pepper to taste

Fried Feta

  • 1 block vegan feta trader joe's
  • 1 cup gf bread crumbs or nut coatings
  • 1 cup corn starch
  • 1 can liquid from chickpeas
  • 2 cups canola oil for frying
  • 1 tbsp salt

Hot Honey Dressing

  • 1/4 cup agave
  • 3 tbsp sriracha or more for heat
  • 1 tbsp apple cider vinegar

Instructions
 

  • Pat feta block down with paper towel then cut the block into small cubes. Pour all the liquid from the chickpea pan into a bowl, add gf bread crumbs into a seperate bowl, and add corn starch & salt into another bowl. You should have 3 seperate bowls for your dredging station.
  • Dip one feta cube at the time first in chickpea liquid, then corn starch, back in chickpea liqiuid, then gluten free breadcrumbs. Repeat this process carefully until all feta cubes are coated.
  • While you are dredging the feta cubes, pour the canola oil into a fry pan over medium heat. When feta cubes are ready, fry 1-2 minutes on each side making sure it does not melt. When done, place on paper towel to drain excess oil.
  • In a large bowl, add all salad ingredients and stir to combine. Seperate salad mixture between 2 plates then top with feta cubes.
  • For the dressing, whisk all ingredients in a mixing bowl. Taste to adjust where needed. Pour dressing on top of salad and ensure feta cubes are coated. Ready to serve!
