BAE-GOALS: GF & VGN Everything Bagels

If you fall into gf, vgn, or both, you are probably aware that finding a bagel you can eat is close to non-existent. For the rare times I can find them in a store, I worry what goes into them and avoid them all together. Although I have never been a baker, I’ve mastered a GF & VGN bagel by using only 3 ingredients. If I can do it, so can you.

This recipe takes under 20-minutes to make. I used everything seasoning but alternatives like poppy seeds, sesame seeds, or even mixing in cinnamon and raisins into the dough are all going to achieve the same yummy results. Any type of plain vegan yogurt and gluten free flour will suffice, for this I used creamy cashew yogurt and gf all-purpose flour. For the flour to yogurt ratio, you will measure as you go – if the dough is crumbling/too dry, add a bit more yogurt, If the dough is too wet, add a bit more flour. After kneading the dough, you should be able to form it into a firm ball.

Ingredients
  

  • 1 – 1.5 cup gluten free all-purpose flour adjust ratio to yogurt as you go
  • 1 – 1.5 cups vegan yogurt I used creamy cashew yogurt
  • pinch of salt optional
  • 1 tbsp olive oil
  • everything seasoning

Instructions
 

  • Preheat the oven to 375F. Add 1 cup of flour and 1 cup of yogurt to a mixing bowl. Add a pinch of salt if using then begin to knead the dough. Add additional flour or yogurt until you are able to form the dough into a firm ball. If the dough is wet, add more flour. If the dough is dry/crumbling, add more yogurt
  • Sprinkle some flour on a cutting board then shape the dough into an oval like log. Slowly cut dough into 4 coin-shaped pieces. Shape the dough with your hands into a bagel shape, use your thumb to poke the hole in the middle. Lay on a baking sheet once done
  • With your hands, rub olive oil around each bagel. Sprinkle everything seasoning over the top (or all over) and set back down on the baking sheet
  • Place the bagels in the oven for 15-20 minutes. Remove and let cool before slicing and topping. Ready to serve!
