Chipotle Change Up: Homemade ‘Sofritas’

The burrito bowl is back and better than ever. This recipe specifically focuses on how to make Chipotle’s famous ‘Sofrita’s’ but can be used in tacos or as protein to my own famous burrito bowls with vegan avocado crema.

Chipotle’s Sofrita’s are shredded tofu braised in chipotle chilies, roasted poblanos and spices. I typically shop at Trader Joe’s or farmers markets so finding poblano’s can be challenging especially if I am not in the right season. If you happen to come across some, simply roast the poblano pepper over open flame and add to the blender alongside the rest of the ingredients. This recipe is without the poblano pepper and tastes just as authentic.

The actual sauce can be poured over any protein if tofu is not your favorite. Although I highly suggest you try the recipe as is – this would go well over legumes or chicken.

Chipotle Change Up: Homemade ‘Sofritas’

Serves: 2 burrito bowls or 4 tacos

  • 1 firm block of tofu, pressed and drained
  • 1 tbsp olive oil
  • 2 chipotle peppers
  • 2 tbsp adobo sauce
  • 1/2 yellow onion, minced
  • 2 tbsp tomato paste
  • 1 tbsp coconut aminos, (gf soy sauce)
  • 2 tbsp apple cider vinegar
  • 1/4 cup water
  • salt
  • 2-4 tbsp of brown sugar

Method

  1. Once tofu is pressed and drained (I use paper towels to wrap the block then heavy cooking books to drain out the water) cut the tofu into cubes. On a large sauce pan over medium/high heat, add 1 tbsp of olive oil then add the tofu cubes. Fry for about 10 minutes, flipping cubes evenly so they begin to brown on each side.
  2. While tofu is frying, add all ingredients from chipotle peppers – 1/4 cup water into a blender (do not include salt or brown sugar). Blend until smooth. Set aside.
  3. When tofu is crisp on all sides, reduce heat to a simmer and pour the chipotle pepper mixture into the same pan. Add salt and brown sugar – taste as you go to see what is needed. Stir till tofu cubes are evenly coated. Remove from heat and serve over burrito bowls or add as protein in tacos.
