At the end of last year, my husband and I packed our entire lives into a 26-foot U-Haul truck and embarked on a journey from Nashville, TN, to our new home in Steamboat Springs, CO – right in the middle of a blizzard. These past few months have been a whirlwind of holiday travel, a revolving door of guests, and settling into our new life in our tiny mountain town.

We were fortunate to find a great rental, albeit in a 30-year-old cabin home, complete with blue flower wallpaper, yellow linoleum floors, and dark wood cabinets. Surprisingly, I’ve fallen in love with it. This kitchen has sparked a wave of creativity in me, and I spent a good part of the winter break curating and planning the recipes I’m excited to share with you in the upcoming months.

If you’ve been following me for a while, you know I never miss a Taco Tuesday. For those of you who are new and searching for plant-forward, vegan, and gluten-free recipes, you’ve come to the right place – welcome! My advice when cooking is to let the instructions be a loose guide. My only goal is to spark embers of creativity in your kitchen. If animal meat is your preference, by all means, add it if needed; however, you might be surprised at how delicious plants can taste when they’re the main event.

Crispy Air-Fryer Cauliflower Tacos With Avocado Crema

Ingredients
  

Roasted Cauliflower

  • 1 large head of cauliflower I used a purple cauliflower but any color works
  • 2 tbsp olive oil
  • 4 tbsp taco seasoning
  • 5 gluten-free tortillas I used almond flour tortillas
  • 1 cup cilantro chopped
  • 1 cup shredded cabbage

Avocado Crema

  • 1/2 cup vegan yogurt I used cashew yogurt
  • 2 limes juiced
  • 1 medium avocado
  • 3 garlic cloves
  • 1 tbsp cumin
  • salt to taste
  • water to thin as desired

Instructions
 

  • Cut cauliflower head into florets and add to a large mixing bowl. Add olive oil and taco seasoning then stir till all florets are coated. Line an air-fryer or baking sheet with parchment paper then cook in oven or air-fryer 425F for 20-25mins flipping halfway. Keep a close eye to make sure they don't burn.
  • While cauliflower is roasting, place all ingredients for the avocado crema besides the water into a blender. Add water until you reach your desired sauce consistency – it should be smooth and creamy. Taste as you go to see where seasoning needs adjusting.
  • Warm tortillas over an open flame on the stove then place on serving plates. Top tortillas with shredded cabbage and roasted cauliflower then drizzle over avocado crema. Serve with chopped cilantro and additional lime wedges.
