Dressed to Kale: Pine nuts, Lemon Avocado Salad

Happy March 1st! For the realm of Natalia, this marks the official countdown until I leave to Hawaii at the end of the month. I am SO excited as we will be celebrating one of my closest friends birthdays while we are there (All COVID guidelines will be followed while traveling).

Having an exact date or event helps me set & stick to health goals. It’s exciting to see what you can accomplish in the date range that you give yourself. As we’ve had many people visit us the past couple months, eating out has lead me to eating some not-so-healthy options. While it’s completely okay to do so, It’s time for me to cut these out again and stick to meal prep & tons of fruits & veggies.

This salad is so simple and a great meal-prep option. The prep & cook time is under 10 minutes making it a great option for lunch during your busy work week. You can sub the pine nuts for other nuts like chopped cashews or almonds if you cannot find them in the store. The key to this salad is finding the best avocados. Check out Sprouts or any local produce stands – this is where I usually buy ours.

Dressed to Kale: Pine nuts, Lemon Avocado Salad

Serves: 2

  • 2 cups kale, rinsed & chopped
  • 2 large lemons, juiced
  • 1 tbsp olive oil
  • 1 cup vegan mozzarella
  • 2 ripe avocados
  • 1/4 cup pine nuts
  • salt & pepper to taste

Method

  1. In a large bowl, place the chopped kale. Coat the kale with juice from 2 minutes then let sit for a few minutes to let the juice soak in.
  2. Add olive oil, pine nuts, salt, pepper, avocados, and vegan mozzarella.
  3. With a fork, mash the avocados against the side of the bowl while leaving a few “chunky” pieces.
  4. Taste as you go to see if more salt & pepper needs to be added. Ready to serve!
