Fall Harvest: Mixed Grains & Sweet Potato Salad
The holidays will be here quicker than you know it. Queue the never-ending holiday parties, sweets, and gift exchanges. Many associate this time of year with stress as this means less days in the office and budgeting for finances. My goal is to help alleviate some of your stress by creating affordable and time-saving recipes for your holiday parties. This gives you more time to get through your to-do list and spend quality time with family & loved ones.
This recipe takes a total of 20 minutes and can be stored in the fridge tasty leftovers. The colors resemble fall leaves and the ingredients are all in-season. I got everything from Trader Joe’s (per usual) but you can sub any type of grain if shopping elsewhere as Harvest Grain Mix is a TJ’s brand. This is a great dish to put on a holiday table spread!
Fall Harvest: Mixed Grains & Sweet Potato Salad
Serves: 4 sides
- 1/4 cup dry fall harvest blend from Trader Joe’s
- 1 cup marinated artichokes, chopped
- 1 cup mini heirloom tomatoes, chopped
- 1 cup mixed nuts, chopped
- 2 cups arugula, rinsed
- 5 baby carrots, chopped
- 1-2 cups sweet potato, chopped & roasted
- 1 cup Brussels sprouts, chopped & roasted
- 6 asparagus spears, chopped & roasted
- 1 cup baby bell mushrooms, chopped & roasted
- 1/2 cup balsamic
- 1/2 cup olive oil
- 2 tbsp Southwest seasoning
- 2 tbsp cumin
- salt & pepper to taste
Method
- Preheat oven to 400F. While oven is heating, chop the Brussels, sweet potatoes, mushrooms and asparagus into small cubes. Lay out on a baking pan, drizzle with olive oil, salt, pepper, cumin, and southwest seasoning. Pop the veggies in the oven for 15-20 minutes.
- While veggies are cooking, follow the instructions for the harvest grain mix to cook in a medium sized pot. When done, pour mixture into a bowl, place in fridge, and let cool.
- When veggies are done, add to the chilled harvest grain mix bowl after removing it from the fridge. Add tomatoes, artichokes, arugula, mixed nuts, and baby carrots. Stir to mix ingredients together, addling balsamic, olive oil, and seasoning to taste. Ready to serve!
