Good Chives Only: Corn & Avocado Salad In A Creamy Chive Dressing
A few months back, I planted my first starter garden which I formally refer to as “my crops’. My crops have been exploding and now it’s time for ‘harvest’. Alongside some veggies, I planted various herbs. Chives & parsley being one of them. I feel very proud of this small victory as i’ve never grown anything in my life. That said, I would like to make it known to my readers whom I love so much that I grew the chives & parsley needed for the recipe – that’s all š
Good Chives Only: Corn & Avocado Salad In A Creamy Chive Dressing
Serves: 2
For the salad
- 3 ears of corn, cut off the cob (or 2 cups of corn)
- 4 green onions, chopped
- 2 avocados, cubed
- 4 cups butter lettuce
- olive oil
- salt & pepper
For the dressing
- 1 cup vegan mozzarella
- 1/2 cup oat milk
- lemon zest of 1 lemon
- 1 lemon, juiced
- 3 garlic cloves
- 1/2 cup fresh chives
- 1/4 cup parsley
- salt & pepper
Method
- In a large sauce pan, add 1-2 tbsp of olive oil. Add corn and chopped green onions. Season with salt and pepper. Stir occasionally over medium to high heat until you see char on the corn kernels. Remove from heat and set aside.
- Add all ingredients to a blender, blend until smooth. Taste as you go to add more salt & pepper if needed. Se aside.
- In a large mixing bowl, add butter lettuce and 1/2 of the dressing mixture. Add 1/2 of the chard corn and green onion mixture. Pour remainder dressing then add rest of chard corn and green onion mixture along with avocado cubes. Mix lettuce until each piece is evenly coated in mixing bowl.
- To prepare, divide salad into 2 bowls. Top with additional chives & green onions. Add salt & pepper to your liking. Ready to serve!
