Happy early St. Patricks day! In a time where events & celebrations are still limited, I thought posting a “green themed” recipe would be a great & tasty way to celebrate.
Tahini sauce is a unique way to add healthy fats to your diet and is rich in anti-inflammatory monounsaturated fats. You can make your own or buy pre-made in the store. I typically opt for Trader Joe’s Tahini Sauce. What makes this green is the fresh basil & green onions that go into the sauce.
I always make extra sauce as I love to dipping veggies into it or adding it to my salads during the week. It can easily be stored for a few days in the fridge while still remain fresh. If wanting to add additional protein, chicken or crispy tofu will make this dish more filling & pair wonderful with the sauce.

Green Themed: Crispy Chickpeas & Cauliflower In A Green Tahini Sauce
Serves 2
Green Tahini Sauce
- 1/2 cup tahini
- 2 lemons, juiced
- 1 tbsp apple cider vinegar
- 4 tbsp water (add 1 tbsp at a time till you reach desired consistency)
- 1 tbsp agave syrup
- 1 cup fresh basil leaves
- 4 green onions, chopped
- 4 garlic cloves, chopped
- salt an pepper to taste
Cauliflower & Chickpea Mixture
- 1 head of cauliflower, chopped into florets
- 2 tbsp satay
- 1 can chickpeas, rinsed
- 2 tbsp cumin
- 1 tbsp paprika
- 4 tbsp olive oil
- salt and pepper to taste
- 1 lemon sliced for topping
- 2 green onions, chopped for topping
Method
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- In a large bowl, add the cauliflower florets. Add 2 tbsp olive oil, salt, pepper, 1 tbsp cumin and 2 tbsp satay. Stir to coat then place on the baking sheet leaving room for the chickpeas.
- Using the same bowl the cauliflower florets were in prior, add chickpeas, remainder 2 tbsp olive oil, paprika, 1 tbsp cumin, salt, and pepper. Stir to coat then add to the same baking sheet. Place the baking sheet in oven for 25 minutes.
- While cauliflower & chickpeas are roasting, add all ingredients for the green tahini to a blender. Add more water if needing a thinner consistency. Taste as you go to see if more salt & pepper need to be added. Pour into a jar and place in the fridge once done until ready to serve.
- When the cauliflower & chickpeas are done roasting, divid into plates, add a lemon wedge, additional chopped green onions, and drizzle green tahini on top. Ready to serve!
