Guac On: Avocado Lime Rice

Brown rice has been a permanent guest at our family table. Pairing it with beans and veggies, acting as a base for buddha bowls, or mixing it in with salads are easy ways to add fiber to your diet. Brown rice helps lower cholesterol, improve your digestive tract, promote fullness, and acts as a great source for magnesium and protein.

Like brown rice, Avocados are no stranger to the health world. Having more potassium than bananas, they are loaded with heart-healthy monounsaturated fatty acids. This helps reduce inflammation, much like olive oil. Like brown rice, they are rich in fiber and have been shown to increase the number of antioxidants that you are able to take in.

Combine this healthy whole grain with nature’s most desired superfood and you have one nutritious and delish dish. Serve as a main course or a side with salmon or tofu.

Guac On: Avocado Lime Rice

Makes 4 side servings

  • 1 large avocado, pitted
  • 1 large lime, zest & juice
  • 2 garlic cloves, chopped
  • 1/2 cup green onions, chopped
  • 1 cup cilantro, chopped
  • 1 cup parsley, chopped
  • 1 cup brown rice
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tbsp Himalayan salt
  • 1 tbsp pepper
  • 1 tbsp olive oil

Method

  1. In a large mixing bowl, mash the avocado with a fork then add in lime zest, lime juice, garlic, green onions, cayenne, cumin, oregano, salt and pepper.
  2. Cook the brown rice as directed (I added olive oil and salt to the boiling water). Once done, let rice cool (or place in fridge for 10 minutes). Add the brown rice into the avocado mixture. Sit until evenly coated.
  3. Add cilantro, parsley, olive oil, additional salt, and pepper if needed. Ready to serve
