Thank you to those that encouraged me to take my recipes scribbled on index cards and transform them into this blog. Inspiring others to explore more in the kitchen or around the world has always been my goal. Although not as consistent as I would like to be, this blog has been my creative escape. Curling up on my window seat and typing words in hope to resonate with readers fills me with happiness. Oh, and Mom, thank you for building this amazing window seat.

I turned 25 this past week and wrote out promises that I vowed to myself. One being this blog and to seriously commit to write consistent content. I would love to hear feedback about what you would like to see this year on NWN. Festive recipes like this one, more travel itineraries, weekenders, wellness products, let me know! The more feedback the better as my energizer bunny brain has a tough time settling on decisions – It’s a #libra thing (obviously).

This recipe takes 10 minutes and you can easily throw in more of your favorite fall treats like dried cranberries or walnuts. My favorite ingredient in this is Trader Joe’s pumpkin spice pumpkin seeds. WARNING: you may eat the entire pack before making it into the popcorn bowl.

You can leave the protein powder out if you’d like but I think of this as the perfect post-workout treat. For those that like an extra crisp, preheat the oven to 125F and bake for ten minutes. Pro Tip: use a BIG bowl. When you mix the spices, popcorn may try to escape

Pumpkin Spice & Everything Nice: Protein Power Popcorn

  • 5 cups popcorn
  • 1/4 cup cinnamon
  • 1/4 cup pumpkin spice
  • 1/4 cup melted coconut oil
  • 1/2 cup pumpkin seeds
  • 1 cup vegan vanilla protein powder
  • himalayan salt to taste

Method

  1. Pour popcorn in a large bowl then evenly coat popcorn with the coconut oil.
  2. Add all other ingredients to the bowl, mix until all is evenly coated
  3. For the crisp popcorn seekers, pre-heat oven to 125F. While oven is heating up, lay popcorn out on a baking sheet. Place sheet in the oven once ready and bake for 10 minutes.
