Sweet Tooth: Chia Pudding

Being a food addict is hard, what’s worse is having a sweet tooth that never seems to be satisfied. Lucky me, I have both. Also lucky me (and you) in today’s world healthy desserts are all the rage. Replace your dairy with coconut milk and your chocolate with almond butter and sooner or later you’ll have something sweet that’s also healthy to eat.

On today’s menu: Chia Pudding – sugar, spice, and everything nice. This pudding has a special place in my heart. It requires no cooking skills; just a blender (I use the Ninja Professional NJ600) and a fridge. The results are delicious and good for you!

When choosing your coconut milk opt for the carton or canned. Canned coconut milk is going to be more creamy, make sure it is the low-fat kind. The carton will give you a thinner consistency, both are good just depends on your preference of pudding.

Chia Seeds are whole grain and among the most nutritious foods on the planets (don’t underestimate their size). They are loaded with fiber, protein, Omega 3 fatty acids, and various micro nutrients. They also add a great texture to your pudding. Try it out for yourself and let me know what you think!

Chia Pudding

  • 1 cup coconut milk
  • 1/4 cup brown sugar
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • dash of cinnamon
  • blackberries
  • agave nectar
  • granola

Method

  1.  Pour ingredients from coconut milk to cinnamon into blender and blend until smooth
  2.  Pour mixture into serving bowls and refrigerate for up to 3 hours
  3.  Once done, top it off with granola, blackberries, and agave nectar (I like to add coconut flakes too)
