You Feta Believe It: Vegan Greek Salad

The secret behind veganism is knowing your brands. Many of the dairy-free cheeses out there taste like plastic or something I would never want to consume. Violife, follow your heart slices, and trader joe’s are my three favorite. This recipe uses Violife’s vegan feta which I use in the dressing and the salad.


You Feta Believe It: Vegan Greek Salad
For the tofu
- 1 block of firm tofu, pressed with paper towel
- 4 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 lemon juiced
- 3 tbsp garlic powder
- 1/2 shallot, chopped
- 1 tbsp oregano
- 1 tbsp salt
- 1 tbsp pepper
For the dressing
- 1 cup vegan sour cream
- 2 tbsp olive oil
- 3 green olives
- 2 tbsp of olive bring
- 2 tbsp garlic power
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 tbsp oregano
- salt and pepper to taste
For the Salad
- 4 cups butter lettuce
- 1 can chickpeas, rinsed
- 1 cup cherry tomatoes, halved
- ½ red onion, chopped
- 2 avocados, cubed
- 1 cup vegan feta
Method
- Add all tofu ingredients to a mixing bow, stir to combine. Place in fridge for 20 minutes to marinate.
- Add all dressing ingredients to a blender, blend until smooth. Set aside.
- In a large sauce pan over medium heat, add tofu (strain majority of the marinade). Grill for 10-15 minutes until golden brown on each side. Set aside.
- In a large mixing bowl, add all ingredients for the salad. Then add dressing & fried tofu. Stir to combine. Add more feta once done on top. Ready to serve!
