No Bake New Mama Energy Bites

For my first recipe back since having a baby and officially becoming a mom (!!), it only felt right to share what I’ve been snacking on nonstop through my third trimester and well into this postpartum/breastfeeding season.

We welcomed our sweet baby girl into the world just over two weeks ago and are fully soaking up the newborn bubble. I spent a lot of time prepping for labor and postpartum (aka the fourth trimester) over the past 10 months, and one of the best things I did for myself was meal-prepping nourishing, easy-to-grab meals for once she arrived. Now that I’m living it, I have to give myself a little pat on the back — having healthy meals and snacks ready to grab has truly been everything.

These energy balls are about as simple as it gets (one bowl, minimal ingredients), but don’t let that fool you. They are absolutely packed with protein, healthy fats, and nutrient-dense ingredients — and when you’re breastfeeding or just in need of a quick, satisfying bite, having a one-handed snack like this is worth its weight in gold.

No Bake New Mama Energy Bites

Prep Time 10 minutes
Course Snacks
Servings 20 balls

Ingredients
  

  • 1 1/2 cup rolled oats I used GF oats, this is what helps structure the energy bites
  • 1/2 cup creamy peanut butter adjust based on consistency
  • 1/2 cup coconut shreds unsweetened
  • 1/3 cup agave
  • 1 ½ tbsp vanilla extract
  • 1/2 cup mini chocolate chips I used dairy-free mini chocolate chips
  • 2 tbsp chia seeds
  • pinch of salt

Instructions
 

  • In a large mixing bowl, mix together all ingredients using a wooden spoon or your hands until well combined.
  • If the mixture feels too dry, add a tablespoon of water or more agave, a little at a time, until the mixture holds together easily.
  • Scoop about 1 to 1½ tablespoons of the mixture with a spoon, then use your hands to roll into balls.
  • Line a Tupperware or dish with parchment paper, then add the energy bites to the container to store.
  • Let them firm up in the fridge for 12 hours before consuming.
  • Store in the fridge for up to 1-2 week or freeze for up to 3 months.
